Cellar Notes

Practical guides and short reads from the George Street cellar perspective.

Recommendations

Choosing a Bottle with a Little Guidance

A good recommendation is practical, specific and matched to the moment. That is how we like to help.

The best bottle is not always the rarest or the loudest. It is the one that fits the meal, the gift, the weather, the budget and the person opening it.

Tell us what you usually like, or what you want to avoid. We can move from Pinot to whisky, from amaro to a crisp white, and from a safe choice to something more adventurous without making the process feel complicated.

Garden Bar

A Quiet Glass Behind George Street

The Garden Bar is tucked behind the Cellars for slower afternoons, easy conversation and a pour from the range.

Step through the Cellars and the pace changes. The Garden Bar gives George Street a quieter back room: shaded tables, stone walls and a relaxed place to enjoy wine by the glass, local spirits, classic cocktails, whisky, spritzes or a tasting flight.

It works before dinner, after a walk through The Rocks, or as a small pause between the harbour and the city. Add charcuterie for the table and let the cellar team point you toward something new.

How We Curate the Cellar Range

A focused cellar should make choosing easier. Our range is built around craft, quality and bottles worth talking about.

We keep the cellar focused on wines, spirits, beers and bottled cocktails that reward a closer look. The shelves are arranged for browsing, but the real value is in the conversation: what you are opening, who you are sharing it with and the kind of flavour you want in the glass.

Australian craft spirits and wines sit alongside international essentials, so a quick stop can turn into a good discovery. Ask for a recommendation, bring a brief, or simply start with the section that catches your eye.
